The demand for temperature controlled food is increasing in many markets across the globe. The movement of manufacturers and retailers to markets in America, Europe and Asia as well as the changing tastes of consumers in more mature markets are having a profound effect on the logistics industry. This has resulted in high levels of investment by logistics companies and their associated suppliers as they have acquired or partnered local players in order to access these markets. The production of safe frozen foods requires the same attention to good manufacturing practices (GMP) and HACCP principles as the chilled or fresh counterpart. A false sense of security, based on the good safety record of frozen foods, should not reduce care and diligence when preparing, handling or distributing frozen foods. The transport and distribution sections of the cold chain are particularly important to control in order to ensure both safety and quality. Throughout chilled and frozen food manufacturing, assurance of food safety is paramount. Combining the principles of food microbiology, quality control and risk assessment, a Hazard Analysis Critical Control Point (HACCP) approach is recommended by many regulatory bodies to ensure food safety in accordance with food safety legislation.
Food industry losses are very high due to the nature of temperature critical transportation. As much as 33% of perishable items are lost during transportation and due to flaws in logistics. Annually US$ 35 billion or more can be saved in terms of dollar and resource wastage .The transport and distribution sections of the cold chain are particularly important to control in order to ensure both safety and quality. The major tool at our disposal is the temperature monitoring of foods at each point within the cold chain. To preserve safety in cold chain foods there are prescribed maximum temperatures. Currently, the Agreement on the International Carriage of Perishable Foodstuffs specifies the following maxima for transportation: 7oC for meats; 6oC for meat products and butter; 4oC for poultry, milk and dairy products; 3oC for offal; 2oC for fish.
